This was our original Nagasaki Solingen hand-hammered Santoku knife! It still features its classic design, but we updated our branding, so it is not as dominant as it was on the original.

The Santoku knife is the Japanese equivalent to the western chef's knife. It is used in a similar way, but provides less room for a rocking motion which is typically for western knives.

The hammered finish on our Santoku helps to release sticky clipping from the blade without having to peal them off or prevents clippings from sticking to the blade at all.

The first new addition to the Nagasaki family is the traditional western chef's knife. This piece of traditional western knife making is perfectly balanced and is a perfect cooking knife.

The knife is ideal for cutting meat, fish, vegetables, fruits and what ever you can think of.

Nakiri knives are Japanese vegetable knives. They are ideal for cutting vegetables and fruits.

  • Blade characteristic: Nakiri

  • The blade is 7 inch / 18 cm long

  • At its base the blade is 0.8 inch / ~2 mm

  • VG10 stainless steel Damascus blade

  • Hardness of 59-60 HRC

  • Sharpened using Solinger Dünnschliff

  • The knife weighs ~0.50 lbs / 225 g

This knife features the same design as our Nakiri knife, but adds another unique feature: a hollow edge. The unique characteristic of a hollow edge are several small cavities that get hammered into the blade in close proximity to each other. Like with the hammered surface on our Santoku knife the purpose of these cavities is to prevent the adherence of particularly thin, greasy or otherwise sticky clippings.

This property is due to the reduction of the blade surface which comes into contact with the cut material. In the case of pure cheese knives, there are even holes in the blade instead of the cavities, which achieve the same effect. However, since soft or very thin material can be entangled in the holes, holes are not universally applicable. Cavities, on the other hand, are a good compromise between reducing the surface of the blade and stabilizing the cut material.

A last minute addition to our family is a paring knife, which is a small knife with a plain edge blade that is ideal for peeling and other small or intricate work (such as de-veining a shrimp, removing the seeds from a jalapeño, 'skinning' or cutting small garnishes). It is designed to be an all-purpose knife, similar to a chef's knife, except smaller.

  • At its base the blade is 0.8 inch / ~2 mm

  • VG10 stainless steel Damascus blade

  • Hardness of 59-60 HRC

  • The knife weighs ~0.13 lbs / 58 g

  • Micarta handle in black or brown
